A few thoughts about coffee. Pt 1

When we started dreaming about the Greenhouse in 2014, coffee was immediately part of the conversation. Coffee that I would find on adventures around the country was nowhere to be found in Ocean Springs or Biloxi.  Visiting cafes became a way for me to explore a new area while traveling, in addition, of course, to trying local snacks.  The coffee I was tasting was bright, juicy and full of flavor. It was dynamic and each cup from each small craft roaster had a different story to tell. It was the first time this potion that helped wake me up in the morning was more than just starter fluid for my day.

It was an adventure!  A way for me to connect with the local coffee shop, their preferences and procedures. A way for me to connect to the roasters and to the land where the coffee was grown.  

I wanted access to that coffee in my day to day life…. When I wasnt traveling… and more than that…   I wanted to bring that adventure to my own community.  

So when Kait and I were researching the different coffees we were going to serve we had to make decisions… Roasters were popping up everywhere.  We wanted coffee to be a focus.  Not just that we would be a coffee shop, but we wanted what people were drinking to become part of the discussion; for folks to learn what they liked about this new wave of coffee. We knew that education was a big part of our role in the community.  

Our focus in Biloxi has moved away coffee, although we have continued to serve the same amazing coffees as when we opened.  The only change is we have added espresso. (and a bunch of fun sweet latte drinks) But we have lost our role in helping people along the coffee adventure.  

So, here we are starting this up again.  We will continue to serve the same amazing coffee, but we are going to start making sure you get a little coffee adventure to go with it.  

Intelligentsia - We love Intelligentsia for their beautifully dynamic coffee but also for their direct work with farmers creating impeccable coffee and healthy economic situations for the farmers themselves. They are revolutionizing the coffee industry with their practices.

Reve - Reve does an amazing job sourcing and roasting coffee with a focus on the culture of their land. It is a superb coffee built on a foundation of perfectionism that comes with a passion and then they add the fun that is Louisiana. 

Mama Mochas -  We love Mama Mochas Coffee because of their beautifully crafted dark roasts. They are able to bring out the rich chocolaty flavors that make dark roasts so delicious. Mama Mochas is owned and operated by an inspiring family whose values focus on making great coffee and being great humans.

Coast Roast - Coast Roast is an establishment on the gulf coast! They were the first serious roasters to open and have been killing it down here. They helped us with our cold brew skills and their cold brew blend of coffee is the best we’ve ever had!
